There are few flavours as closely related to Easter, known in Spain as Semana Santa (holy week) as ‘torrijas’, a Spanish-style French toast. This is a traditional sweet treat eaten at this time of year all over Spain, with just a few variations depending on the place it is made in, of course. Today we want to share a recipe for making ’torrijas’ at home, with a traditional flavour that goes well with QVExtra! EVOO.
‘Torrijas’ recipe

Ingredients
- 1 loaf of bread (best if slightly stale)
- 1 litre milk
- 1 cinnamon stick
- Lemon peel
- 4 tbsp. sugar
- 3 eggs
- Sugar and cinnamon for coating
- Mild SIQEV EVOO, such as one made from the Arbequina or Empeltre varieties.
Method
Cut the bread into slices and place them on a serving dish. Meanwhile, beat the eggs in a bowl and put the milk in a saucepan with the cinnamon stick, sugar, and lemon peel.
When it comes to a boil, remove the milky mixture from the heat and pour it over the slices of bread, letting it soak for a few minutes.
Then, heat the pan with our mild SIQEV EVOO – we suggest Pago de Quirós, from Oleo Quirós because it has a perfectly mild flavour to be used in sweet treats or with fish, thanks to its lightness in the mouth and soft notes.
Dip the soaked bread in the egg and fry in the SIQEV EVOO until golden brown. Then, remove the excess oil by placing the bread on some kitchen roll.
While they are still hot, we coat them in a mixture of cinnamon and sugar, and voilà! They can be eaten warm or cold, however you prefer. Enjoy them this year because, although it may not be a normal Easter period, nothing will stop us from having fun!
