But what if the olive grove receives little rainfall throughout the year? This will influence the optimum time for harvesting, as well if there are alternating harvests, which will also determine whether the fruit arrives at its destination at one time or another.
In order to produce a SIQEV EVOO with the quality required by our associates, the peak time for harvesting olives is usually from November until January.
This is when the olives destined to make EVOO have reached their perfect maturity. However, it can sometimes take until April or May.
Once collected, they arrive at the mill of each of our associates and that is where the magic happens. The very special moment when an olive becomes liquid gold, just as intended.
